3. Pour the mixture into the molds and gently tap on the bottom of the mold to release any air bubbles. Place in the fridge for about an hour for set up (about 30 minutes).
4. For the filling, stir together icing sugar and butter in a bowl until creamy. Spread on top of your avi cake before sprinkling with icing sugar, followed by raspberries, strawberries, blueberries, or whatever fruit you might wish to decorate this lovely cake with.
5. Bake in the oven at 350°F (180°C) for 20 minutes.
6. Turn on your oven’s fan and open the oven door to let the air circulate the treated avis.
7. Take out of the oven, carefully slide them out of the molds and cool on a wire rack. Refrigerate overnight to set. The next day, run a knife around each half of your avi cake, then remove from molds and slice in half horizontally to serve.
