- Chicken: 4 medium-sized pieces
- Rice: 1 cup rice (2 3/4 cups of cooked rice)
- Yogurt: 1/4 cup yogurt (1/3 cup of yogurt)
- Raisins and Ghee: 1 tbsp. raisins, 2 tbsp. ghee, salt to taste.
- Freshness: Freshly-cut chicken pieces, soaked overnight in lemon juice or vinegar with salt and chili powder. Marinade chicken for one hour.
Method Of Chicken Biryani Recipe:
Step 1: Wash and soak the rice in water for half an hour or until the water comes out clean.
Step 2: In a pan, add two cups of water, ginger-garlic paste, and salt to taste. When the water starts boiling, add soaked rice to it.
Step 3: Bring down the flame and gently cook. The rice will start boiling very fast. Lower the flame to a minimum and let it cook at a low flame until the rice absorbs all the water. Do not open the lid. Add 1 tablespoon of ghee and wait until it melts and turns light brown.
Step 4: The rice will become light golden brown and have an even smell; this is your perfect al-fukar (cooked) rice.
Step 5: It is now time to prepare the biryani. To do this, heat the pan again; add chicken pieces and marinate them for one hour.
Step 6: After an hour, remove the chicken from the marinade and fry until all the ingredients are browned in a pan at medium flame. Next, add rice and salt to taste and cardamom powder, and fry for another minute.
Step 7: Add chicken stock and cook for 15 minutes. Add cinnamon, cloves, and ginger when the rice is fully cooked. The smoke is released from the pan; add raisins and ghee to it. Add 1 tablespoon of ghee to chicken biryani and ½ tablespoon to rice. Mix nicely with a spoon or fork; cover the lid until it cools down slightly.
