- 500 grams of Chicken, diced (In parts)
- 3 Tablespoons Oil for cooking
- 1 Tablespoon Ginger-garlic Paste for seasoning
- 2 Tablespoons Onion, chopped
- 2 Bay Leaves
- 1½ teaspoon Red Chili Powder
- 2 Green Chilies, split lengthwise and chopped finely to make strands. You can also use 2-3 large dried red chilies. [Or use 1 Teaspoon of Cumin Seeds (Whole) and 3 Cloves of Fresh Garlic (Crushed).]
- 1 Teaspoon Turmeric Powder …..OR…1 Teaspoon Garam Masala
- 2 Tablespoons Mint Leaves, chopped finely (or Coriander leaves – chopped)
- 1 Teaspoon Cumin Powder …..OR…1.5 teaspoons Ginger Paste
- 3-4 Tomato, chopped finely. You can also use 2-3 Large Tinned Tomatoes (Chopped).
- 2 Cloves of Garlic, crushed or crushed slightly to make a fine paste.
Step 1: Wash the rice and soak it in water. Heat a pan on medium heat and add 2 Tablespoons of oil; add the ginger garlic paste and let it cook for a minute. Next, add the onion, bay leaves, and red chili powder and let them sauté until the onions become translucent.
Step 2: Add the diced Chicken to the pan and let it cook for about 5-8 minutes until well cooked. (Add more oil if needed).
Step 3: Add the tomato and green chilies, mix well and cook for another 5-8 minutes.

Step 5: Add 2 Tablespoons of water, tamarind paste, mint leaves, cumin seeds, and garlic paste, and let it cook for another 5 minutes.
Step 6: Add the soaked rice to the pan and mix with the rest of the ingredients. Let it cook for another 7-10 minutes.
Step 7: Add 1 teaspoon of cumin powder (or 1.5 teaspoons ginger/garam masala) on top to garnish.
Step 8: Remove from heat and serve immediately with pickles, curd, and some mint or coriander leaves.
