How To Make Chocolate Odyssey Cake Secret Recipe?
- 2 cups all purpose flour
- ½ cup cocoa powder
- ¼ tsp. baking soda
- 1 tbsp. baking powder
- ½ tsp. salt
- 2 sticks butter, room temperature
- 1 cup white sugar
- 1 cup brown sugar
- 4 eggs
- 2 tsp. vanilla extract
- ½ cup milk Chocolate Mousse:
- 16 oz. good quality dark chocolate (chopped)
- 6 tbsp. unsalted butter (softened)
Step 1: Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round cake pans.
Step 2: In a medium bowl, mix flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
Step 3: In a large bowl, cream the butter and sugars together until smooth and light in color. Beat in egg yolks one at a time. Blend in vanilla extract. Gradually add half of the dry ingredients; beat on low speed until blended.
Add half of the milk, beating just until blended. Repeat with the remaining dry ingredients, mixing until blended after each addition.
Step 4: Whisk together egg whites and salt until frothy in a small bowl. With an electric mixer on medium speed, beat whites and salt until soft peaks form. Add remaining milk 1 tablespoon at a time, blending after each addition until blended (see note below).
Step 5: Using a rubber spatula, gently fold half of the egg whites into the batter to lighten it. Fold in the remaining egg whites in 2 full folds. Dump the entire mixture into prepared pans and smooth tops.
Step 6: Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean to lightly browned. Cool cakes in pans for 10 minutes on wire racks. Remove cakes from pans and cool completely on wire racks before wrapping them with saran or cellophane (no plastic).
Step 7: To make Chocolate Mousse: Place chopped chocolate in a small bowl. Heat the butter to emulsify it. Add this to the chocolate and melt it on low, constantly stirring until smooth. Set aside to cool for about 15 minutes.
Step 8: To Make Cake Secret Recipe: Remove cake layers from their pans and place them on a cake plate or large serving plate, bottom side up. (This is done because of the mousse in the middle) Top each layer with about 1/4 cup of the mousse.
Step 9: Cover the top and sides of the cake with 2 to 3 more layers of cake, and place back in the fridge or cool room until ready to serve, although you can keep it at room temperature.
